I waited until today to plan out my meals for the week because I didn’t have a chance to go grocery shopping over the weekend. We ended up eating out a ton over the weekend because of it. I need to come up with some good ideas of what to make with stuff we always have around the house! I feel like there is only so much spaghetti I can eat! That’s my go to these days since it’s dairy free and super easy and fast and my 2 year old loves it. We always have ground beef in our freezer because we order organic beef in bulk a few times a year. What is your go to?
Monday – TBD, I’m guessing subs from Jersey Mike’s?
Tuesday – Hobos – (foil pack dinners). Ground beef on the bottom topped with potatoes, onions, carrots and zucchini and cooked in a foil pack in the oven or on a grill.
Wednesday – Tuna Melts – we’ve never made them before and I don’t know why! Hopefully my daughter will eat them!
Thursday – Hamburger Stew – I still need to write this recipe! It’s a tomato based stew with ground beef and potatoes and barley. Delicious and goes a long way!
Friday – Leftovers
I’ll be going out of town this coming weekend so my husband can sandblast the basement walls and floor and paint. I’ll have to come up with something for him to eat while we are gone and make sure to get to the store Friday afternoon with next week’s plan in place!
