This Monday Meals is coming to you on a Sunday because I have something extra special for tomorrow! Today is so nice out that I decided we needed to go to the park and have a picnic. The farmer’s market was going on and so we walked around and ended up getting some Hawaiian shaved ice (yum!) and then had a little picnic in the gazebo at the park. Leilani got a chance to run around and play and tire herself out before a big nap so I’m sharing this now. If you haven’t noticed, I haven’t been posting my meal plans. That’s because of a few reasons. Since having Landon, it’s been crazy and I’m getting used to having 2 kids. The next reason is because I’ve had to be dairy free since the end of April. It’s eye opening how much stuff has dairy in it and how much dairy I cooked with. It’s finally getting a bit easier and the last few weeks we’ve actually had a plan, I just haven’t been documenting it. So here goes!
Sunday – Basil Thai Noodles with chicken
Monday – Salsa Chicken Tacos (Throw some chicken breasts in the crockpot with some salsa, we have homemade salsa that my mom made, and a little bit of mild taco sauce and shred)
Tuesday – Leftovers
Wednesday – Tomato Basil Chicken Fettuccine
Thursday – Leftovers
Friday – Steak with Mediterranean Risotto with sautéed zucchini
Saturday – Spaghetti
I also have the ingredients to make some homemade bruschetta and a corn & cucumber salad. If you haven’t noticed, we’ve been using a ton of basil because I have a huge basil plant that is overflowing with beautiful leaves! I love basil so much!
