Quinoa Salad – Recipe

I got this awesome quinoa salad recipe from my mother-in-law. You can add or omit whatever you’d like to make it your own. It’s a great vegetarian salad and without the optional feta, it is also vegan and super delicious! It’s always a hit, unless you’re my husband!

Difficulty: Beginner Prep Time 20 mins Total Time 20 mins

Instructions

  1. Mix cooled quinoa, chopped veggies and chickpeas together.
  2. Whisk together lemon juice, olive oil, garlic and salt & pepper to taste. (You can add some dill at this point if you'd like)
  3. Add dressing to quinoa mixture and top with slivered almonds. Stir and chill for at least 4 hours. (You can add Feta cheese at this point if you'd like as well).
