My son has been dairy free for about 7 months(ish) now and we are starting him on the dairy ladder to slowly re-introduce dairy back into his system to see if his intolerance has lessened or gone away. Step 1 is baked in butter or milk at 350 degrees for at least 15 minutes. This recipe was the perfect start to this because he loves bananas and he loves bread.
I always have a few bananas that are a little past their prime laying around and this is such an easy recipe. It is quite simple, but very delicious and moist. I’ve made it with the walnuts chopped in the bread and I’ve also made it so the whole walnuts are just sprinkled on top. Both are absolutely delicious and add some crunchy texture to the bread if you like. Otherwise, without walnuts tastes just as good too (and I don’t have to worry about the baby choking on them!)
- 3-5 ripe bananas
- 1/3 cup melted butter
- 1 cup Sugar
- 1 egg beaten
- 1 teaspoon Vanilla
- 1 teaspoon baking soda
- pinch of salt
- 1 1/2 cups of flour
- 1/2-1 cup chopped walnuts *optional
- Preheat the oven to 350 degrees F.
- Mash the bananas in a large mixing bowl.
- Mix the melted butter into the mashed bananas.
- Stir in the sugar, beaten egg and vanilla.
- Mix in the baking soda and salt.
- Stir in the flour until mixed well.
- Add your chopped walnuts. (Optional)
- Pour the mixture into a greased 4x8 loaf pan (I sprayed some Pam with flour in mine).
- Bake for 1 hour.
- Cool and remove from pan. Makes 1 loaf.
