I got this awesome quinoa salad recipe from my mother-in-law. You can add or omit whatever you’d like to make it your own. It’s a great vegetarian salad and without the optional feta, it is also vegan and super delicious! It’s always a hit, unless you’re my husband!
Ingredients
- 2 cups cooked quinoa
- 1 can chickpeas, rinsed
- 3 green Onion
- 1 orange/red Pepper, chopped
- 1 yellow Pepper, chopped
- 1/2 cup carrots, chopped
- 1/4 - 1/2 cup olive oil *I use 1/3 cup
- 1/2 cup squeezed lemon juice
- 1 clove garlic
- 1/2 cup slivered almonds
- 1 handful Fresh Dill *optional
- 1 small container Feta *optional

Instructions
- Mix cooled quinoa, chopped veggies and chickpeas together.
- Whisk together lemon juice, olive oil, garlic and salt & pepper to taste. (You can add some dill at this point if you'd like)
- Add dressing to quinoa mixture and top with slivered almonds. Stir and chill for at least 4 hours. (You can add Feta cheese at this point if you'd like as well).
