Mix cooled quinoa, chopped veggies and chickpeas together.
Whisk together lemon juice, olive oil, garlic and salt & pepper to taste. (You can add some dill at this point if you’d like)
Add dressing to quinoa mixture and top with slivered almonds. Stir and chill for at least 4 hours. (You can add Feta cheese at this point if you’d like as well).
