Well, it’s been awhile. I fell off the wagon for a few weeks because our life got hectic. I’m absolutely terrible at meal planning when we are super busy. Between the sickness, allergic reaction to medications, all the doctor appointments and just…life, I didn’t menu plan and we spent entirely too much money on eating out. BUT, I can say that Leilani has still been eating well, so there’s that. It’s a good thing she doesn’t eat what we eat every day sometimes!
Monday – Leftovers
Tuesday – Hot ham and cheese
Wednesday – Turkey meatballs with onions and mushrooms in gravy over rice with broccoli and cauliflower
Thursday – Leftovers
Friday – Steak, garlic potatoes, asparagus
Saturday – Cheese tortellini with meat sauce, Texas Toast and side salad
Sunday – leftovers
I’m going back to making steaks on Friday nights! We did that a lot last year and it works out great for Saturday morning breakfast. We make an extra steak that we slice up the next morning and fry the leftover potatoes with some eggs and there you have it – breakfast! Yum!
I’m also planning on making some sausage, egg and cheese on english muffin sandwiches for next week over the weekend.
For Leilani I’ll be making a sweet potato and quinoa puree to freeze that will last probably 2 months. She has mashed sweet peas in the freezer right now and we’ll be getting a bunch of fruit from Sam’s Club this weekend to puree and cube for the next few months too!
