Last week was rough. We didn’t end up getting to the store and didn’t end up making a dinner plan so we were all over the place and ate out a lot. So Sunday I went to the farmer’s market early in the day and then to the grocery store so I could make a delicious soup for dinner and so we could have leftovers for lunches this week and I found amazing things at the farmer’s market which helps me figure out what I’ll be making next week too.
Sunday – Creamy Chicken and Wild Rice Soup (made in the crockpot and super easy!)
Monday – Chicken breasts with Roasted Asparagus and Potatoes (from my mom’s garden)
Tuesday – Leftovers
Wednesday – Brats with Pickled Red Onions and Pasta Salad
Thursday – Leftovers
Friday – Homemade Mac & Cheese with Meatballs
Saturday – Anniversary Dinner at our favorite restaurant (which means I’ll get a big, fat, juicy steak with lots of mushrooms and sides. I can’t wait!)
Sunday – Leftovers or BW3’s – Kevin has his fantasy football draft so maybe I’ll have him bring me some buffalitos instead of leftovers? Who knows!
Sunday night I not only made the soup, but I made some pickled red onions too. I will be letting my peaches get a bit riper and then I’m going to try peach jam using the same sugar free recipe I used with my strawberries (recipe here)…YUM! I’ll also be making some homemade spaghetti sauce to can for the first time! The farmer’s market had amazing tomatoes, carrots, green peppers and I bought a giant bunch of basil to use!
