Monday – Leftovers from the weekend
Tuesday – It’s my husband’s birthday so he wants to go to Olive Garden and I’m fine with that! No dishes for anyone! I will however be making a banana cream pie for him for dessert one of these days.
Wednesday – Breaded Flounder, Cheddar Broccoli Rice and Cheesy Broccoli (that’s a lot of broccoli!)
Thursday – Hamburger Helper night – this is going to be Daddy’s night to cook since Mommy has a haircut/color!
Friday – Mexican – There is this amazing place called Cinco de Mayo Fiesta that has the best chimichangas in the entire city and that’s what I decided that I wanted to eat.
Saturday – Pizza Party with some college friends and their families! (Papa Murphy’s style)
Sunday – We will be enjoying some Outback Steakhouse with some friends. Yum!
Lunches this week will be sandwiches or Lean Cuisine’s or leftovers. I’ve become obsessed with tuna sandwiches and making my own cucumber/tomato salad. This week I got all the ingredients to do a cucumber, tomato, black olive and feta salad with a homemade balsamic vinaigrette. For the balsamic vinaigrette, I used Emeril’s recipe and just substituted golden balsamic vinegar instead of the dark stuff, because that’s what I had on hand.
I do have to figure out breakfasts this week. Maybe muffins, because I’ve been obsessed with muffins lately too.
