Monday Meals – July 18th, 2016

This week I promised myself I would be on top of things. Last week was rough for us. Everyone in the family got sick on different days and just wasn’t feeling well, so I felt like the week dragged on. We didn’t get much done and cooking was a struggle. So this week, I took a few hours on Sunday to meal prep for the rest of the week. Amazingly, when I was at a volleyball game, my husband got both of the kids to nap at the same time AND they both stayed sleeping for 2 hours+ so I got a ton done! It makes a huge difference and we will stick to our meal plan better because of it!

MondaySesame Noodles with Chicken (I baked some chicken breasts last night and cut them into slices and will add it right to the noodles).
Tuesday – BLTs
WednesdayKorean Beef Bowl with Zucchini – this is going to become a household staple!
Thursday – Grilled Cheese and Tomato Soup – because I have found a way to have them dairy free!
Friday – Mediterranean Risotto with Tilapia (with a buttery dill topping) and roasted asparagus

I made the delicious quinoa summer salad again for lunches this week. I can’t wait to eat it!
