Monday Meals – June 27th, 2016

Last week we had TONS of leftovers from when my parents were here so I didn’t menu plan, we literally ate leftovers or grabbed something quick. This week we have plans with the IL’s over the weekend for the 4th so it’s going to be a quick week. I’m making a Quinoa Summer Salad for my lunches this week. I’m trying to eat healthier since I am always hungry!

Monday – Slow Cooker Balsamic Chicken with Mashed Potatoes
Tuesday – Leftovers
Wednesday – Pork Loin (in the crockpot) with Asparagus and Mediterranean Risotto – I plan on putting the pork loin in the crockpot with some broth and onions and cooking it low and slow all day while I’m at work.
Thursday – Korean Beef Bowl
Friday – Leftovers

For the Quinoa Summer Salad I’m going to mix quinoa with black beans, tomatoes, sweet peppers, avocado, black olives and spinach and whip up a quick lime and garlic vinaigrette.
